Vanilla Gelato Ice Cream Recipes
- 5 egg yolks
- 3/4 cup sugar
- 2 cups whole milk
- 1 cup light cream
- 2 teaspoons pure vanilla extract
- Mix egg yolks and sugar in mixing bowl. Beat the mixture at a medium-high speed until it becomes very thick and pale yellow in color.
- In medium saucepan, heat the milk to a simmer and add half of the milk to the egg yolk mixture, whisk the mixture until blended. Stir remaining milk, cook over low heat, stirring constantly, until mixture coats back of spoon.
- Then remove from heat; stir in the cream. Pass mixture through a fine strainer into medium bowl, so that it set over an ice bath to chill. Mix in vanilla, then freeze in an ice cream maker as per the instruction of the manufacturer.
