Creams->Dates Ice Creams Varieties
-> Dates Ice Creams
- 4 Tbs rum
- 2/3 cup milk
- 2 eggs separated
- 2/3 cup cream whipped
- 1/2 cup granulated
- 1 1/2 cups cottage
- 1/3 cup chopped
- 2 Tbs finely chopped
- finely grated zest
and juice of 1 lemon
- The first thing to do is to soak the dates
in rum for about 4 hours.
- In a bowl add the egg yolks
and sugar and beat until light. In a saucepan heat the
milk to simmering point then stir into egg yolks.
the mixture to the rinsed pan and cook over low heat
stirring constantly until thickened and then cool stirring
- Process cottage cheese, lemon zest and
juice and rum strained from the dates together in a
blender until smooth then mix with the custard.
the mixture into a container and cover and freeze until
just becoming firm.
- Turn into a bowl and beat well then
fold in whipped cream, dates and ginger.
- In a bowl whip
the egg whites until stiff but not dry and fold into
- Spoon mixture back into container then
cover and freeze until firm.
- About 30 minutes before
serving transfer the Date ice cream recipes to the refrigerator.
